West Cork Brewing Co.

In December 2014 Dominic Casey, Henry Thornhill and Brewer Kevin Waugh launched the West Cork Brewing Co. in Casey's of Baltimore. The 1st Brew-Hotel to set-up in Ireland.

The nano-brewery is based in Casey's of Baltimore, Hotel and brews four regular beers, Sherkin Lass a citrussy Pale Ale 4.4%, Roaring Ruby Dark Red Ale 4.4% and Stout X Stout West a chocolate porter 5.5%, Cape Haze a refreshing IPA 4.7%; and some seasonal ones, like Spice Island an irish Red Ale with ginger, Beacon of Hops an American Pale Ale 4.1% and Cape Clear Lavender Ale 4.5%; more brews soon! 

West Cork has long been associated with the best in quality artisan food both locally,nationally and beyond these shores.

West Cork Brewing Company believes it can add a high quality and locally produced craft beer product to stand alongside it's cousins in the food industry!

By using only the purist ingredients - starting with Natural Spring Water - we intend to become a firm favourite with the discerning palette of Irish Beer Lovers everywhere.

Sherkin Lass

4.4% – Pale Ale

Called after the nearby Sherkin Island, this 4,4% Pale Ale is light, sweet and refreshing, malt forward and well balanced by columbus, centennial, amarillo and citra hops.

Roaring Ruby

4.4%  –  Dark Red Ale

Called after the most southerly bay in Ireland, Roaringwater Bay, this dark Red Ale has a smooth and creamy mouthfeel, which allows the beautiful balance of coffee, caramel and toasted bread to really shine.

Stout x Southwest

5.5% – Milk Stout

Carrying notes of coffee and cinnamon, this smooth and easy drinking milk stout delights with its velvety base and creamy finish. It's Ireland's most southwesterly stout.

Cape Haze

4.7% - Hazy West Coast IPA

A refreshing and zingy west coast IPA from the west coast of Ireland. Generously hopped with herkules, admiral, mandarina bavaria, and yellow sub, this hazy golden base carries notes of pine, resin, mandarin oranges, and summer salt breezes. Famous Cape Clear Island, a haven for birds, whales and good times.

 

Seasonal Beers

Spice Island Red

5.1% - Irish Red Ale with Ginger

A warming ginger beer with notes of honey, biscuits and nuts. With 6kg of fresh hand-chopped ginger in every batch, this ale is the perfect way to add zip to your day year round.

Beacon of Hops

4.1% - American Pale Ale

The ultimate light and refreshing summer drink, this easily sessionable pale ale really showcases the amarillo, citra and el dorado hops. Floral hoppy rather than bitter hoppy, this straw-colored chewy beer is called after one of the most famous local landmarks - the Baltimore Beacon.

Cape Clear Lavender Ale

4.5% - Lavender Ale 

80/- base with flameout addition of Cape Clear Lavender. Malty sweetness with notes of caramel and dark fruit are balanced by just a touch of lavender. The low hop profile really allows the complexity of the flavour to shine through.

 

Brewed using our own spring water. N.B. All beers are unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageen moss tablets) is used to aid in clarification.

Just back from a wonder 2night stay at Casey's of Baltimore! Everything about Casey's was wonderful from the moment we stepped through the door to leaving!! Room was spotlessly clean, bathroom looked brand new & spacious. Breakfast both mornings was 10 out of 10. Ate dinner both nights in the hotel fish(haddock)& chips with side salad absolutely gorgeous so much so I had it again on the second night. Staff were very attentive polite & very efficient. Highly recommended staying here!! Thanks to you all at Casey's hopefully we'll be back again!

Absolutely a lovely family run hotel. Have stayed here twice in the past six and both great experiences. I very much enjoyed the breakfast. Fresh orange juice, cheeses + ham and smoked mackerel, very tasty. They also have a mirror brewery and the 'Sherkin Lass' is ��

We love this place, it’s the nicest to stay in the area. We had a room in the lodge which was spacious, bright, like new , very quiet and absolutely spotless. The food is fantastic- from the complimentary scones and huge breakfast to the top notch sea food options for lunch and dinner. The staff is super friendly and welcoming. It’s just great to spend the evening in the bar and chat to the locals. The in-house brewery is worth a tour and Terra is a very passionate and knowledgeable brewer who will answer all your questions. We also got to try the different beers. Overall a fantastic stay and we can’t wait to come back again soon!

We had a terrific meal here on a visit to Baltimore. The food was fresh and tasted home made. The fish pie was fantastic and the stew was wonderful. The staff were very nice, friendly and personable.

Walking home after our meal and sampling the home brew from the on-site West Cork Brewery was just what we needed as we were comfortably stuffed with the large, delicious portions of the freshest seafood around, not to mention the home brew..
